TRIVIA: a recipe from the chef at VW Dominicus Beach

Daniele Genova is the executive chef of our most highly-regarded resort. We asked him to share a recipe that can be prepared at home to woo your guets during the forthcoming Christmas season.


Ingredients for 4 servings:
red tuna, 400 gr
clean oysters or clams (just the white part), 100 gr
caviar, 30 gr
one lemon
one tangarine
one avocado
chives, 20 gr
fresh ginger, 20 gr
sesame oil, half of a teaspoon
soy sauce, two tablespoons
extra virgin olive oil
salt and pepper

Cut the already clean oysters into thin strips and place them on a plate.
Marinate them for a couple of minutes in salt, pepper and tangerine juice.

Dice tuna into approximately half centimeter thick cubes.

Place tune inside a cup and season with soy sauce, grinded ginger, a dash of sesame oil, diced chives, oil and a pinch of salt and pepper.

Slice the avocado into cubes and add a pinch of salt, oil and lemon.

Place a pastry ring inside a large bowl and stuff with seasoned tuna, employing slight pressure to maintain its shape.

Next, place a layer of seasoned avocado on top of the tuna.
Finish by placing clams in the shape of a crown.
Decorate with caviar edges.
Garnish with chive sprigs.
Serve cold.
