DELICIOUS MEXICAN CUISINE: when food becomes a sheer pleasure

Mexican cuisine has ancient roots; with the Spanish colonization, various ingredients also reached the West and even today, the bold flavors that we love to taste in simple dishes are a delicacy and somehow make us travel back.

Corn was a food staple for the Mayans, its growth was considered sacred, they offered prayers to Yum Kaax, the Mayan maize god, who was sculpted as a beautiful young man. In addition to corn, Mayan farmers grew beans, squash, cayenne pepper, sweet potato, papaya, avocado, and cocoa.

The Aztecs, on the contrary, grew mainly wheat; almost every 18 month of their calendar included ceremonial rites and dances related to growing and harvesting. In the fields they grew tomatoes, hot peppers, amaranth, avocado and cocoa.

Centuries later, these same ingredients are the basis of well-known dishes: “empanadas”, corn tortillas stuffed with meat and cheese and then fried; “picadillo”, which is ground meat seasoned with almonds and chili (powdered spicy dried pepper) and guacamole that is prepared with avocado and onion.

Jalapeño peppers, black beans, burritos (pork meat rolls), chocolate sauce to accompany chicken and turkey during special occasions, cilantro to flavor, agave mezcal and tequila liquor.
